Maxime Bernard, head chef

Maxime Bernard, a talented chef focused on flavour

The chef Maxime Bernard knows the Côte d’Azur like the back of his hand. For nearly 10 years, he has worked at various prestigious establishments in Nice such as the Grand Hôtel Aston and the Palais de la Méditerranée.

After the opening of "Le Panier" restaurant in the centre of the city, Maxime joined the Calade rooftop restaurant team to contribute his talents and understanding of Nice to a unique and sophisticated establishment. With the blue sky and the Baie des Anges as his backdrop, our chef takes you on a journey for a unique experience which will leave you with some tasty memories.

If I were... I would be:

A vegetable: the Jerusalem artichoke, both hard and soft and with a sweet taste

A salad: Romaine lettuce, fresh, crunchy, summery

A spice: paprika, fragrant and works with any dish

A sauce: meat jus, a staple of French cooking, which is not made much any more. Homemade, takes a long time to prepare, requires discipline.

A fruit: pitaya (= dragon fruit), unusual flavour, varied and unlikely colours

A dessert: Black forest gateau, German origins, a combination of flavours, a “taste sensation”

An alcoholic drink: rum, aromatic, strong, dry, fragrant

Seafood: octopus, versatile, can do many things at once

Vintage: 1986

A dish: a Tzigane-style joint, tasty, a variety of flavours
